Oven Temperature Converter
Convert oven temperatures between Celsius, Fahrenheit and gas mark, and adjust for a fan (convection) oven. No more guessing when a recipe uses a scale your oven doesn't have.
How to use this calculator
- Enter the temperature and the scale it's given in.
- Read the equivalents in °C, °F and gas mark.
- Use the fan oven figure (~20°C lower) if yours has a fan.
Formula used
Celsius and Fahrenheit convert exactly; gas marks follow a standard table (Gas 4 = 180°C = 350°F). Fan (convection) ovens circulate hot air and cook more efficiently, so recipes written for conventional ovens need about 20°C knocked off.
Example calculation
180°C = 350°F = Gas mark 4 — the classic "moderate" baking temperature.
In a fan oven, set it to about 160°C for the same result, since fan ovens cook hotter.
Three scales and the fan trap
Oven temperatures come in three incompatible systems — Celsius (most of the world), Fahrenheit (US recipes) and gas marks (older British ovens) — so a recipe frequently uses a scale your oven doesn't show. The conversions are fixed and simple once you have them, with Gas mark 4 / 180°C / 350°F being the workhorse "moderate" setting worth memorising.
The subtler trap is the fan oven. Fan (convection) ovens blow hot air around, transferring heat faster and more evenly, so they effectively cook hotter than their dial suggests. A recipe written for a conventional oven will over-bake in a fan oven at the same number — the fix is to drop about 20°C (or one gas mark). Because real ovens also vary from their dials, a cheap oven thermometer is the single best way to know what temperature you're actually baking at.
Why use this calculator?
- Convert between °C, °F and gas mark instantly.
- Get the fan-oven adjustment so recipes don't over-bake.
- Handle recipes written for any oven scale.
Frequently asked questions
What is 180°C in Fahrenheit and gas mark?
180°C = 350°F = Gas mark 4 — the standard 'moderate' oven temperature for most baking. It's the one worth committing to memory since so many recipes use it.
How do I adjust for a fan oven?
Reduce the conventional temperature by about 20°C (or drop one gas mark), because fan ovens circulate hot air and cook more efficiently. So a recipe's 200°C conventional becomes about 180°C fan.
Why does my oven cook differently from the recipe?
Ovens vary from their dial settings — often by 10–20°C — and fan vs conventional makes a big difference. An inexpensive oven thermometer reveals the true temperature so you can adjust reliably.
